Orange Tart Recipe
Ingredients:
For the batter:
3 extra large eggs
1 cup coaster sugar
180 ml. milk
Finely grated rind of 1 lemon
125 grams butter
275 ml. self raising flour
1 tsp. baking powder
½ tsp salt
For the Syrup:
250 ml. fresh orange
½ cup sugar
2 tsp finely grated orange rind
Procedure:
Preheat the oven to 180 degrees C and spray a medium size ovenproof dish 5-6 ramekins with non stick spray. Beat eggs till frothy, then gradually add sugar, beating until pale and thick. Heat milk, lemon rind and butter together, stirring until the butter has melted/ Sift flour, baking powder and salt over the egg mixture. Mix, stir and turn over in the prepared dish. Bake for 40 minutes or until done;
To prepare syrup: ingredients to a boil and simmer for 5 minutes. Remove from heat and keep warm. Pour the hot syrup over the tart as soon as it comes out of the oven. Leave to cool and serve. Serve with custard if necessary.
